Lately I've found a place for focus of a different kind. I'm not sure how to describe this place because defining it diminishes it somehow.<br />

I wrote a poem - more of a <i>canto</i> really - that describes going there.<br />

Perhaps it is a simple meditation. I don't know.<br />

Spring is busy. Longer days give me the sense that I've more time. So what if I don't get to the garden until four in the afternoon! I still have several hours of daylight to accomplish garden tasks.<br />
<br />
One regular task in my week is <a href="http://valsplay.blogspot.com/2011/09/mango-ginger-granola.html" target="_blank">granola-making</a>. My family gets grumpy if they open the fridge in the morning and find only a few crumbs of the granola batch remaining.<br />
<br />
I make granola differently each time, selecting the ingredients from what I find in the cupboard. Here's the recipe for a recent batch that we particularly enjoyed. It includes dried apricots which give a nice pop to the palate.<br />
<br />
Ingredients:<br />
<br />
1/2 cup oil<br />
1/2 cup honey<br />
4 1/2 cups rolled oats<br />
2 cups of wheat germ<br />
1/2 cup raw pumpkin seeds or pepitas, chopped<br />
1 cup hulled sunflower seeds<br />
1/2 cup coarsely ground flax seeds<br />
1 cup chopped almonds<br />
1 cup chopped walnuts<br />
1/2 cup of shredded coconut<br />
1 cup chopped apricots<br />
1/2 cup raisins<br />
1/2 cup dried cranberries<br />
<br />
Preparation:<br />
<br />
<ul>
<li>Preheat the oven to 330 Fahrenheit (about 165 C). </li>
<li>In a large baking pan, slowly heat the honey and oil on your stovetop. Your setting should be on low.</li>
<li>Mix the oats and wheat germ into the honey and oil, stirring slowly.</li>
<li>Once the grains have been added, put in the seeds, continuing to stir the mix.</li>
<li>Place the baking pan into the oven, setting the timer for 7 minutes.</li>
<li>While the first items are baking in the oven, coarsely chop the nuts.</li>
<li>At the 7-minute bell, take out the baking pan and add the nut mixture and the coconut. Mix thoroughly. </li>
<li>Continue to toast the mix for a total of about 35 minutes, stirring every 7-10 minutes.</li>

<li>While the grains and nuts are toasting, chop the apricots. Then add the raisins and dried cranberries to the apricots.</li>
<li>Set the dried fruit aside for now. (It will be added after all the toasting is done.)</li>
<li>When the granola has reached that golden color, remove the pan from the oven and let cool for 5-7 minutes. Then pour the granola into a large bowl and mix in the dried fruit.</li>
<li>Let the mix cool. Store tightly covered in the refrigerator. </li>

A good friend wrote and asked me to share something I've been working on, so I've put up a sachet I embroidered recently. My friend and I used to paint together in Romania. She is a wonderfully brave painter, and I've never forgotten her advice to me… <i>Paint as if you have no shame</i>. Some would disagree with this, but the notion of leaving behind inhibition during the creative process makes sense to me.<br />

Here are the ingredients:<br />

3/4 cup apple juice<br />
1/4 buttermilk (or regular milk)<br />
7 tbsp water<br />
2 1/2 tbsp honey<br />
2 1/2 tbsp vegetable oil<br />
2 1/3 cups bread flour<br />
1 cup whole wheat flour<br />
2/3 cup rolled oats<br />
1 1/2 tsp salt<br />
2 1/2 tsp yeast<br />
1/2 cup chopped almonds (for the dough)<br />
<br />
2/3 cup dried apricots (added mid-knead)<br />
<br />
1/2 cup of chopped almonds (for crust)<br />

Preparation:<br />
<br />
Using your electric mixer with a paddle attachment or your bread machine, combine the ingredients <i>except the dried apricots</i> – keeping in mind your machine’s instructions.<br />
<br />
When your machine beeps, or when you are in between your first and second kneads, add the dried apricots. This delay keeps the apricots from getting too chopped up in the machine.<br />
<br />
When kneading is done, let the dough rise for about 45 min. or until it has doubled in size. (If you prefer hand kneading, see my note on hand kneading in my <a href="http://valsplay.blogspot.co.at/2011/06/best-ever-polenta-pumpkin-seed-bread.html" target="_blank">Best Ever Polenta Pumpkin Seed Bread</a> Recipe.)<br />

Once the dough has doubled, pour it out into a floured surface, and give it a good kneading - a couple minutes. Shape your dough into an oblong form and roll it in a bed of chopped almonds. Place the almond-covered dough on your baking sheet.<br />

Let the dough rise again until doubled in size. (I use a damp cloth to cover the dough while it is rising.)<br />

Baking:<br />

Bake your loaf for about 20-25 minutes in an oven preheated to 415 Fahrenheit (about 210 C). Your almond crust with be nice and toasty while the dough will be moist and chewy. Delicious!<br />

I recently had some butternut squash left over from dinner. What to do? Why, put it in bread, of course!<br />

I found my inspiration from <a href="http://www.mybakingaddiction.com/" target="_blank">MyBakingAddiction</a>, a great site for all you obsessive bakers!<br />
<br />
My own version has more fiber - whole wheat flour and ground flax seeds - and less sugar. That's the <i>healthy</i> part! Yet it's rich - due to buttermilk - and nutty - from walnuts and flax seeds. Add sweet and spicy - cranberries and cayenne - and WOW! It's delicious!<br />

In a large bowl, mix together the butternut squash puree, eggs, oil, buttermilk, water, and sugar.<br />

In a separate bowl, whisk together the flours, baking soda, salt, and spices. Add the flax seed, walnuts, and dried cranberries to the dry ingredients.<br />
<br />
Stir the dry ingredients into the butternut squash mixture. Remember the rule about not over-mixing!<br />

February can seem dreary, especially here in the Pacific Northwest. Yet there is beauty everywhere, and a promise of more to come.<br />

One of my favorite blogs, <a href="http://houzz.com/" target="_blank">Houzz.com</a> recommends you make lists when you're sick, something to pass the time on the couch, between raspy coughs and itchy sneezes.<br />
<br />
My list will be visual, I thought. I can post a listing of my favorite photos from 2013. You know the photos I'm talking about, the ones that capture that moment, that special line or color that catches your eye, that shadow, that reflection, that singular texture.<br />
<br />
Starting with my most recent photos, I worked my way backwards through time, skimming all the days past, the people and places I had encountered.<br />
<br />
It wasn't long before I had exhausted myself. I've taken over four thousand photos in 2013! I had barely reached my way back to August when I had to give up.<br />

I make pizza. ALOT. It's a great way to use whatever is in your fridge. Got some eggplant that's looking a little sad? Some salami that's getting close to it's use-by date? Make a pizza!<br />

My favorite style of dough has whole wheat and cornmeal. It's nutty and bready, almost like focaccia.<br />
<br />
This recipe makes one round deep dish pizza or one large 12 x 19 rectangular pizza. (Since my deep dish pan is still in transit from Vienna, I'm using my daughter's large rectangular "college" pan. Thank goodness she is living with us right now!)<br />

Ingredients:<br />

1 1/2 cups water<br />
1/4 cup olive oil<br />
2 2/3 cup unbleached all-purpose flour<br />
1 cup whole wheat flour<br />
1/2 cup cornmeal or polenta (I like a coarse grind, which gives the crust a nice crunch)<br />
1 teaspoon salt<br />
1 packet (1/4 oz.) active dry yeast<br />
<br />
Preparation:<br />
<br />
Set your bread machine to its dough cycle, combine the ingredients – keeping in mind your machine’s instructions.<br />
<br />
When the dough cycle is complete, pour the dough out onto a floured work area. (I just use my counter top.) Turn the dough a few times, and shape into a ball. Cover with a damp cloth, and let rest for about 20 minutes.<br />
<br />
While you are waiting for your dough to rest, prepare the pizza pan by greasing the surface with olive oil and sprinkling it with about one tablespoon of cornmeal. This will make it easier to serve the pizza once it is done.<br />
<br />
You can also start to gather your toppings. Today I am using a basil pesto base, topped with salami, roasted eggplant, marinated artichokes, caramelized onions, and two kinds of cheese - monterey jack and string cheese. (I love the patterns of the strings atop the pizza. :)<br />
<br />
When the dough is ready, roll it out. Since I am using a rectangular pan, I shaped my dough into a log before rolling.<br />
<br />
Put on your toppings and bake at 425 for 10 minutes, then lower the temp to 375, and bake another 10-15 minutes.<br />

Sometimes you’ve got to catch what life throws your way. That’s me today… sitting in my bed at the <i>Klinick</i>. It’s hot here, but not intolerably so. It’s noisy too.<br />

The asphalt trucks working on the street below spew fumes that float upward and into our room, and I feel that slight headache, the one that sits on the edge of your eyeballs and tells you not to make any quick movements.<br />

Then there’s that gnat dancing around my head.<br />

So far all that’s tolerable too. After all, I have <a href="https://www.spotify.com/" target="_blank">Spotify</a> on Classical, listening to a Mozart concerto.<br />

Call me an idealist, or an optimist, or even a bit goofy, but I’m glad to be here. Glad to be alive to smell that exhaust and to hear that rumble of heavy equipment. So what I’m wearing silly white compression stockings? Maybe my meds are off…<br />

Odie loved playing frisbee. He was always patient with those - like me - who sucked at throwing the spinning saucer. After a dud throw, he would carefully pick up the plastic disk where it had so clumsily landed, give it a good chew, and then bring it back, ever hopeful that you would get it right the next time and he would be able to jump in the air to catch it with all the grace and joy that only dogs know.<br />

Odie loved the hundezones, the dog parks in Vienna where canines romp together in earnest play. He somehow always found that one stick that the other dogs would covet. Round and round they ran in glorious chase.</div>

This week I discovered another art genre - <a href="http://en.wikipedia.org/wiki/Mail_art" target="_blank">Mail Art</a>. This art movement centers on the notion of art as a message. Mail Art pieces were originally illustrated letters or stamped postcards, but today they include web pages, email, anything that "corresponds". Designs can take any form - sketches, paintings, collages, photos...<br />
<br />
I've had a lot of fun exploring this form of expression.<br />
<br />
I created this Mail Art piece titled, "Memory and Vision" from watercolor paper. Then I used a collage technique, combining images from magazines, greeting cards, and invitations. The background is painted with watercolor, and gold ink is used to highlight areas of the design. I have included stamped messages as well.<br />

For the envelope, I wanted to tell the story of how memories are “painted” by people and place: where we come from, and the persons we have known. The cover depicts a head opening, and a brush painting memories of people holding hands. In the background you see images that represent my origin – a USA map, the colors red, white, and blue, an old stamp, and an official government seal. You also see a partial stamp of the word, “confidential”. This denotes our tendency to hide things about ourselves.<br />

The insert takes the theme of memories and flips it around to consider how memories are made. They come from the visions we have for our lives and ourselves. Notice that my colors have changed – I have added green and yellow to the pallet. The earth opens up and waves flow outward, carrying an old house along. These images suggest a vision of who I want to be and where I want to go. (I have traveled the world for the last 25 years and I want to settle now.) I have stamped “special delivery” on the insert to denote the importance of our visions and dreams.<br />

I hope I've conveyed a sense of playfulness and movement in the piece. The paintbrush, the use of watercolor, and the pattern of waves all suggest movement. The words, “confidential” and “special delivery” are intended to play with the theme of mail. Also, the lips on the back of the envelope are a play on the notion of “sealed with a kiss.” When the envelope is fully open the lips complete the face on the cover.<br />

There's a story behind the painting. I had as much fun imagining the story as painting the piece:<br />

<i>I am dreaming. I’ve traveled by ship across the sea to a new land, where my future lies. As we approach, a magnificent city comes into view. I see buildings of all sizes and shapes – tall, short, thin, stout – reaching upward. The sky is filled with clouds, and perhaps a storm is coming.</i><br />
<i><br /></i>
<i>Our ship closes in, and I notice that the buildings are not buildings at all, but giant pencils, and the clouds are plumes of colors, that flow from the pencils. The sea is cool and clear, but my future city is a chaotic and frenzied unknown. I see possibility, but I am afraid.</i><br />

We're unsettling in order to settle again. I've gone through moves many times; yet each time feels harder than the last. I don't mean to sound dramatic (or gross), but it's a bit like disturbing an old sore. There's a psychological ache that comes with examining the "stuff" of one's life to determine what deserves to move onward.<br />
<br />
In the past week I've been going through my children's old toys. The girls are gone now. One is married with a child of her own; the other graduated from college and follows her own path. What to do with all those stuffed rabbits, puppies, dinosaurs, orcas…<br />
<br />
I snapped photos of each toy and sent them to my daughters. The girls can decide which toys to keep and which to give away. My eldest daughter was quick to give me guidance. I spent an afternoon separating her "keeps" from her "giveaways".<br />
<br />
Bittersweetness is to sit and look at each of your children's toys and remember the story times and bedtimes and holidays we shared. Giving away these toys feels like giving away precious memories.<br />

Now that my Mother's Day gift has survived our precarious international mail and reached Mom, I can share my creation - homemade lavender sachets! I'd been wondering what to make, when I came across some fabric and lace I'd <a href="http://valsplay.blogspot.co.at/2012/07/tea-dye-tutorial.html" target="_blank">stained with tea</a>. Feeling nostalgic, I thought, "Why not shabby-chic vintage-esque sachets?"<br />
<br />
To make the sachets, I cut my fabric into four rectangles, and finished one edge of each piece. Then I sewed on the lace and adored each lace strip with an old-fashioned button.<br />

A few nights ago my husband made a delicious roast pork recipe. It was spicy, a little sweet, and the meat was so tender that it fell apart. Just the way I like it!<br />
<br />
There was enough left over for another meal, so I decided to make roast pork sandwiches. As we had no rolls in the house, I went to work on a new recipe: whole wheat pumpkin rolls! (I confess. I had pumpkin pure in the freezer from the holidays.)<br />
<br />
The resulting rolls were so delicious, and they held up well as sandwich rolls. The pumpkin flavor was a nice complement to the pork. Give my recipe a try and let me know what you think.<br />

Here are the ingredients:<br />

2 cups pumpkin pure (not from can)<br />
1 tbsp pumpkin seed oil (or other oil)<br />
2 tbsp honey<br />
1 tsp salt<br />
2 cups white flour<br />
2 cups whole wheat flour<br />
1 tbsp dry yeast<br />
<br />
Makes approximately 18 3-inch rolls.<br />
<br />
<br />
Preparation:<br />
<br />
Using your electric mixer with a paddle attachment or your bread machine, combine the ingredients – keeping in mind your machine’s instructions.<br />
<br />
When kneading is done, let the dough rise for about 45 minutes or until it has doubled in size. (If you prefer hand kneading, see my note on hand kneading in my <a href="http://valsplay.blogspot.co.at/2011/06/best-ever-polenta-pumpkin-seed-bread.html">Best Ever Polenta Pumpkin Seed Bread Recipe</a>.)<br />

Once the dough has doubled, pour it out into a floured surface, give it a good kneading - a couple minutes - and then divide the dough into 18 dough balls. Place the balls on a baking sheet and let rise until they have doubled in size (approximately 20 minutes).<br />

While the rolls are rising, preheat your oven to 200 C (or approximately 390 F).<br />

Once the rolls have doubled in size, score them with a sharp knife and place in the oven for about 15 minutes.<br />

Basket making is like gardening. Would you ask a gardener, <i>Don't you get tired of gardening?</i> Probably not. There are enough plants on this earth to last a gardener a lifetime.<br />

<a href="http://en.wikipedia.org/wiki/Saul_Leiter" target="_blank">Saul Leiter</a>, the New York based photographer and artist, has come to one of my favorite Viennese museums, <a href="http://www.kunsthauswien.com/en/home" target="_blank">Kunst Haus Wien</a>. Yesterday some friends and I paid a visit.<br />
<br />
It's hard to describe Leiter as his work spans 60 plus years and covers many genres of photography - from street photos and still life shots to portraiture and fashion. Leiter not only takes photos, he paints. His paintings are whimsical and unashamedly pretty.<br />
<br />
Many of the items you see here are from the late 1950's and early 1960's.<br />

Leiter's paintings offer a great contrast to his photos. The paintings, often created with gouache and watercolor, are light, fluid, and playful.<br />

Perhaps most interesting is Leiter's fusion of painting and photography. It's exciting to see the two mediums come together to create something that is both seductive and fun. Here is an example...<br />

I am a big fan of the decorative colors and patterns from the Arts and Crafts period - swirling vines and twisting leaves of sage green and prussian blue, stylized flowers, birds, and fruits. So when Vienna's <a href="http://www.mak.at/en/mak_now" target="_blank">Museum of Applied Arts</a> - the MAK - opened an exhibit on English textiles from the period, it was only a matter of time before I was there.<br />

The exhibit is down in the MAK's basement, where the pieces are protected by glass and low light. The rows of fabric panels are breathtaking. Each piece hypnotizing.<br />

What an extensive variety of English textiles the MAK has collected! Most of the pieces were acquired during the very period in which they were produced, the late 19th century. Back then the MAK was called the Imperial Royal Austrian Museum of Art and Industry (or <i>die k. k. Österreichischen Museums für Kunst und Industrie</i>). <br />

I'm still not over a holiday-induced sweet tooth. I still crave those ginger cookies and chocolate bundt cakes we baked way back in December.<br />
<br />
So, how do I satisfy my cravings in a healthy way? What about a sweet salad with baby greens?<br />

Of course, if we're going to be healthy, why not add a little bit of brown rice? Did you know that brown rice has over six times the fiber that white rice has? And guess what? Brown rice has over 17 times the vitamin E. (Noah Wellness, 2003)<br />

I must admit that it took me some time to get used to brown rice. But once I started to add it to dishes, I begin to notice how the chewy texture and nutty flavor enhance a meal. And since it takes my body longer to digest brown rice, I find I am not as hungry later in the day.<br />

For the sweet elements of this salad I choose a tropical trail mix - macadamia nuts, cashews, almonds, dried pineapple and cranberries. I also added balsamic cream, which is a wonderfully sweet reduction, often used in salads as well as chicken and fish dishes.<br />

Here's the recipe...<br />

Ingredients for one serving:<br />

Arugula and lamb's lettuce (or similar greens)<br />
1/2 cup cooked brown rice<br />
2 tbsp trail mix (dried fruit and nut mix)<br />
1/2 apple, chopped<br />
1 tsp olive oil<br />
1 tsp balsamic cream (reduced balsamic vinegar)<br />

Layer ingredients in a shallow bowl in the order listed above. Drizzle on the olive oil and balsamic cream. Add salt and pepper to taste.<br />

Easter is coming. This is a traditional time for one of my favorite things... baskets! I spend a lot of time looking at these lovely woven works. What captivates me? Color, shape, texture? Maybe it's the utility of a basket that draws me to it. After all, baskets are relatively light and they can hold lots of stuff!<br />

Maybe there is just something primal about a basket. Did you know that basket weaving may be the oldest form of textile art on the planet? (University of Arizona)<br />
<br />
Traditionally, baskets were made of natural fibers - willow, pine needles, and reed, for example. Many crafters still use traditional materials and methods. Becky Bechtel of <a href="https://www.etsy.com/shop/BrightExpectations" target="_blank">BrightExpectations</a> makes beautiful baskets following this style.<br />
